Getting Closer

The cherry get getting ripe!
The cherry get getting ripe!

Our coffee trees are doing well and we expect to be picking soon.

Sometimes there are a few coffee cherries that were not picked last season. So our first pick will take a bit longer as we sort out any beans that are not good.

Pickers will visit every tree and we will have them pick the red cherries. Those cherries will be pulped (the covering removed) within 24 hours, but same day processing is preferred.

The parchment-covered beans have a sweet mucilage on them which must be washed off. Then the beans are allowed to dry to about 12-15% percent internal moisture.

After removing the paper-like parchment, we are left with green coffee beans.

As this is our first year on the farm, we will test roast the beans to see which roast brings out the best flavor.

Our friend and neighbor Mark has helped design our label and will print some for our first sales. Soon we will consider having labels bulk printed.

As you can see, the website is up and running, but until we have the coffee packaged and ready for sale, we have disabled the shopping cart.

We know that you will enjoy our coffee and anxiously await the time we can start selling coffee to you.

Please check back often as we are probably less than a month away!
